The radiator in our living room is broken. There have been some very fortunate and unfortunate elements about this situation.
Unfortunately, when it stopped working last Sunday, it gushed water onto our hardwood floors. It was like someone turned on a water faucet.
Fortunately, Matt was home and heard the gushing. He was able to turn off the radiator and mop up before the floors were damaged.
Also fortunately, the broken valve is apparently very easy to replace if you are Matt and have time to go to the special store that sells valves for antique radiators.
Unfortunately, Matt has been very busy this week. Without heat, the living room is nippy. I’ve been wearing a hat and huddling up to the space heater every evening, craving a big bowl of soup.
Fortunately, I made a soup last weekend that I loved!
Unfortunately, I finished all Monday.
But I’m sharing the recipe here in case you want to make some this weekend. The recipe is amazingly simple and the soup is a wonderful, warm, flavorful treat – even if you have heat in your living room.
Creamy Tomato Soup
Onion, 1, chopped
Coconut oil, 1 tablespoon
Garlic, 2 cloves, diced
Salt and pepper to taste
Dried basil, 1 tablespoon (I’m sure it would be amazing with fresh basil as well, but I don’t like to pay for fresh basil in February in Colorado.)
Diced tomatoes, 1 28-oz can
Water, ½ cup
Coconut milk, ¾ cup
- Saute onion in coconut oil over medium heat until onions are soft, about six minutes.
- Add garlic, salt and pepper and sauté for another minute.
- Add dried basil, diced tomatoes and water.
- Reduce heat to low and let cook for 25 minutes.
- Stir in coconut milk. Blend in food processor or with hand blender. Reheat to serve.

Oh my, the soup sound Soooo good.
Maybe because it’s snowing out, very cold & promises to be a ‘stay home’ weekend…
Or maybe because I just LOVE tomato soup!

I bought some from Whole Foods for some ridiculous price. I couldn’t believe how tasty it was! That’s when I decided to make my own, equally yummy but way less than half the price.

So funny! Those scones taste excellent, as-is; I’d still like to find a way to keep them from crumbling while warm. They are by no means health food, but better (for me) than the grain-flour alternative, and sometimes nothing but a scone will do!
