Every Day Egg Salad

you follow Nourish Paleo Foods closely, you may have noticed that I was not able to get up a “Things that are awesome” Wednesday post yesterday.  I actually love writing these posts and am a little sad not to have finished it in time to post it today.

But, I guess the good news is that the reasons I haven’t been able to finish the post about something awesome is because, well, I was doing things that were pretty awesome.  I’ll recap.

A Very Sushi Christmas Eve was wildly fun.  I stayed up way too late.  So, when I slumped into my seat on my 8am flight Christmas day, I closed my eyes and slept until plane wheels hit the runway in New Jersey.  The gentleman in the seat next to commented that he had never seen someone sleep so well on a plane.  I didn’t try to explain a Very Sushi Christmas Eve to him.

Then I hopped in my rental car and worked my way through the traffic lights on Route 1 to my parents house, where my parents, sister, niece, nephew and I ate dinner and danced to holiday classics like “Dominick The Italian Christmas Donkey” and “I Want a Hippopotamus for Christmas“.

The next morning, I left my parents house to join up with my friend Aney, who is having a baby.  We are now in the hospital, resting and waiting for the baby birthing process to begin in earnest.

Kind of an exciting two days, right?

Anyhow, I have a moment to finish up this post, which I began last weekend.  I wanted to share a recipe that is simple and nutritious, a recipe to get us through that post-Christmas hangover when cooking another elaborate meal or eating another non-paleo treat doesn’t sound so fun any more.  So, I present Every Day Egg Salad.

Every paleo person should have a go-to egg salad recipe.  It’s one of those dishes you can put together quickly, packs a protein punch and changes it up a bit.

Here is my version. It’s a one-bowl wonder. I whisk the dressing in a big bowl, add the eggs and avocado, mush together and eat right from the bowl. Oh, sometimes I will put half away for later, but sometimes not.

This recipe uses ingredients I always have in my house.  As with most simple recipes, you should play around a bit to suit your tastes.  Use this as a starting point.  Then, add more vinegar, throw in some cumin, add a dash of dill.  Soon, you’ll have your own go-to egg salad recipe!

Every Day Egg Salad

Coconut milk, 2 tablespoons

Mustard, ½ teaspoon

White wine vinegar, 1 teaspoon

Shallot, 1 tablespoon, chopped

Hard boiled eggs, 4, peeled

Avocado, ½

Salt and pepper to taste

  1. Whisk together coconut milk, mustard, shallot, salt and pepper.
  2. Add eggs and avocado.
  3. Mash it all together and you are ready to go!
